Description

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 can (16 oz) refried beans

Sauce and Tortillas

  • 1 can (10 oz) enchilada sauce
  • 6 medium flour tortillas

Cheese

  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese

Optional Toppings

  • 1/2 cup sour cream
  • Chopped green onions or fresh cilantro


Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C) to prepare for baking the casserole.
  2. Cook Ground Beef: In a large skillet over medium heat, brown the ground beef until fully cooked, then drain excess fat to reduce greasiness.
  3. Season Beef: Stir in the taco seasoning and water, then simmer for about 5 minutes until the mixture thickens and flavors meld.
  4. Add Refried Beans: Add the refried beans to the skillet, stirring to combine and warming through evenly.
  5. Prepare Baking Dish: Spread a few spoonfuls of enchilada sauce on the bottom of a 9×13-inch baking dish to prevent sticking and add flavor.
  6. Layer Ingredients: Place two tortillas over the sauce, tearing them as needed to cover the bottom fully. Spread one-third of the beef and bean mixture over the tortillas, drizzle with enchilada sauce, and sprinkle with a mix of cheddar and Monterey Jack cheeses.
  7. Repeat Layers: Repeat the layering process two more times, finishing with a cheese layer on top to melt and brown nicely.
  8. Bake Covered: Cover the dish with foil and bake for 20 minutes to allow ingredients to heat through and cheeses to melt.
  9. Bake Uncovered: Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and slightly golden on top.
  10. Cool and Serve: Let the casserole cool for 5–10 minutes to set, then top with sour cream and garnish with chopped green onions or cilantro if desired. Serve warm.
