  • 1 Tbsp olive oil (for sautéing)

Bruschetta Topping

  • 12 oz Roma tomatoes (3/4 lb), diced
  • 2 1/2 Tbsps basil leaves, chopped
  • 3 garlic cloves, minced
  • 1/2 Tbsp balsamic vinegar
  • 1 Tbsp extra virgin olive oil
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 4 Tbsp balsamic glaze


Instructions

  1. Prepare the Chicken: Preheat a large skillet over medium heat and add 1 Tbsp olive oil. While the skillet heats, season the chicken breasts on both sides with salt, black pepper, Italian seasoning, and minced garlic. Once the skillet is hot, add the chicken breasts and cook for about 6-7 minutes on one side without moving them, until golden brown.
  2. Cook and Top the Chicken: Flip the chicken breasts and continue cooking for another 5 minutes. Place a slice of mozzarella cheese on each breast and cover the skillet to allow the cheese to melt, about 2 minutes. While the cheese melts, prepare the bruschetta topping by combining diced tomatoes, chopped basil, minced garlic, balsamic vinegar, extra virgin olive oil, salt, and pepper in a bowl. Remove the skillet from heat when cheese is melted.
  3. Serve with Bruschetta: Spoon the fresh bruschetta mixture generously over each melted mozzarella-topped chicken breast. Drizzle with balsamic glaze for extra flavor and serve immediately while the chicken is warm and juicy.
