Description

Main Dip:

  • 1 package (10 oz) frozen chopped spinach, thawed and drained
  • 1 container (16 oz) sour cream
  • 1 cup mayonnaise
  • 1 package (1 oz) dry vegetable soup mix
  • 1 can (8 oz) water chestnuts, drained and chopped
  • 3 green onions, finely sliced

Decoration:

  • 1 large round bread loaf (such as sourdough)
  • 2 small bread rolls (for bunny feet and tail)
  • 2 black olives (for eyes)
  • 1 baby carrot (for nose)
  • 2 fresh spinach leaves (for ears)
  • Assorted crackers and fresh vegetables for serving

Instructions

  1. Main Dip: In a large bowl, combine thawed and drained spinach, sour cream, mayonnaise, vegetable soup mix, chopped water chestnuts, and green onions. Refrigerate for at least 1 hour.
  2. Create Bunny Shape: Cut a shallow bowl into the center of the large bread loaf and hollow out some of the inside. Use removed bread pieces and small bread rolls to form bunny’s feet and tail. Add olives for eyes, carrot for nose, and spinach leaves for ears.
  3. Assembly: Spoon chilled dip into the hollowed-out bread bowl. Serve with crackers and fresh veggies around the bunny.

Notes

  • You can use Greek yogurt instead of sour cream for a lighter version.
