Description

  • 2 cups crushed Nacho Cheese Doritos
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10 oz) Rotel diced tomatoes and green chilies (undrained)
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the Oven: Begin by heating your oven to 350°F (175°C) so it’s ready for baking the casserole.
  2. Mix the Filling: In a large mixing bowl, combine shredded chicken, cream of chicken soup, undrained Rotel tomatoes and green chilies, sour cream, 1 1/2 cups of shredded cheddar cheese, onion powder, garlic powder, paprika, salt, and pepper. Stir thoroughly until the mixture is well blended.
  3. Prepare the Baking Dish: Lightly grease a 9×13-inch baking dish to prevent sticking.
  4. Layer the Casserole: Spread half of the crushed Nacho Cheese Doritos evenly on the bottom of the prepared baking dish. Spoon the chicken mixture evenly over this Dorito layer. Then, top with the remaining crushed Doritos and sprinkle the remaining 1/2 cup of cheddar cheese over the top.
  5. Bake: Place the dish in the preheated oven and bake uncovered for 25–30 minutes, or until the casserole is bubbly and the cheese topping is melted and slightly golden.
  6. Garnish and Serve: Once baked, remove the casserole from the oven and optionally garnish with chopped fresh cilantro or green onions before serving for a fresh, herbal touch.
