- 2 pounds extra lean ground turkey

Instructions
- Prepare Ingredients: Dice the red pepper and onion. Gather all canned goods and spices. Add the diced red pepper, diced onion, tomato sauce, drained red kidney beans, diced tomatoes with juices, garlic powder, chili powder, ground cumin, paprika, dried oregano, and cayenne pepper into the slow cooker. Stir to combine.
- Add Ground Turkey: Add the extra lean ground turkey to the slow cooker and stir thoroughly so the meat is coated evenly in the mixture. Do not add salt or pepper yet to avoid over-salting since chili powder contains salt.
- Cook the Chili: Cover and cook on low for 8 hours to allow all flavors to meld and the turkey to cook through.
- Season and Serve: After cooking, add salt and pepper to taste. Serve over rice or pasta, and optionally top with sliced avocado, Greek yogurt or sour cream, cilantro, shredded cheddar cheese, tortilla chips, or sliced jalapeno peppers. This chili also freezes well for easy future meals.
