Description

This hearty Crockpot Taco Soup combines lean ground beef, beans, corn, and fire-roasted tomatoes with a blend of spices in a slow cooker for an easy, flavorful meal. Instructions

  1. Brown the Beef: In a skillet over medium-high heat, brown the extra lean ground beef, breaking it up as it cooks. Once browned, drain most of the fat, leaving a small amount for flavor, and transfer the beef to your slow cooker.
  2. Add Ingredients to Crockpot: Add the chopped onion, drained corn, black beans, red kidney beans, fire-roasted diced tomatoes with juices, diced green chilis with juices, beef broth, water, and all the spices (oregano, garlic powder, onion powder, smoked paprika, chili powder, and cayenne pepper if using) to the slow cooker. Stir everything well to combine.
  3. Slow Cook the Soup: Cover the crockpot with its lid and cook on low for 6 to 8 hours or on high for 3 to 4 hours, allowing the flavors to meld together and the soup to thicken slightly.
