Okra
- 1 pound fresh okra, sliced into ½-inch pieces
Breading Mix
- 1 cup cornmeal
- ½ cup all-purpose flour
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ¼ teaspoon cayenne pepper (optional)
Wet Mixture
- 1 egg
- ¼ cup whole milk or buttermilk
For Frying
- Vegetable oil (enough for deep frying)
Instructions
- Prepare the okra: Wash and trim the stems of fresh okra, then slice into ½-inch pieces. Set aside.
- Make the breading mix: In a shallow dish, combine cornmeal, all-purpose flour, kosher salt, black pepper, garlic powder, and cayenne pepper (if using) thoroughly.
- Whisk the wet mixture: In a separate shallow dish, whisk together the egg and milk until well blended.
- Heat the oil: Pour vegetable oil into a deep skillet or deep fryer and heat to 350°F (175°C), suitable for frying.
- Coat the okra: Working in batches, dip the sliced okra into the egg mixture, letting the excess drip off, then dredge them in the cornmeal-flour mixture ensuring an even coating.
- Fry the okra: Carefully add the coated okra into the hot oil in batches, frying for 3 to 5 minutes or until golden brown and crispy.
- Drain excess oil: Using a slotted spoon, remove the fried okra from the oil and place on a paper towel-lined plate to drain off excess oil. Repeat with remaining okra.
- Serve: Serve the fried okra hot, seasoning with additional salt and pepper if desired. Enjoy immediately for best texture.
