Description

These crispy beef taquitos with chipotle sauce are a delicious Mexican-inspired appetizer or main course. Crunchy on the outside and filled with flavorful shredded beef and cheese, they are perfect for a snack or party dish.

  • 1/4 teaspoon black pepper

  • 12 small corn tortillas

For the Chipotle Sauce:

  • 1/2 cup sour cream
  • 2 tablespoons mayonnaise
  • 1 tablespoon adobo sauce from canned chipotle peppers
  • 1 chipotle pepper in adobo sauce (finely chopped)
  • 1 tablespoon fresh lime juice
  • Fresh cilantro and lime wedges for serving (optional)


Instructions

  1. Prepare the Beef Filling: In a bowl, combine shredded beef with cumin, chili powder, garlic powder, onion powder, salt, and black pepper. Stir in shredded cheese until evenly distributed.
  2. Assemble the Taquitos: Warm the tortillas slightly to make them pliable. Place about 2 tablespoons of the beef mixture along the center of each tortilla, then roll tightly and secure with a toothpick if needed.
  3. Fry the Taquitos: Heat about 1/2 inch of oil in a skillet over medium heat. Fry the taquitos in batches, turning occasionally, until golden and crispy, about 3–4 minutes per batch. Drain on paper towels.
  4. Make the Chipotle Sauce: In a small bowl, mix together sour cream, mayonnaise, adobo sauce, chopped chipotle pepper, and lime juice.
  5. Serve: Serve taquitos warm with chipotle sauce on the side, garnished with cilantro and lime wedges if desired.

Notes

  • You can substitute cooked ground beef for shredded beef for a quicker version.
