For the Taquitos:
- 2 cups cooked and shredded beef (such as chuck roast or flank steak)
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded Mexican cheese blend
- 12 small corn tortillas
- 1 tablespoon vegetable oil (plus more for frying)
For the Chipotle Sauce:
- 1/2 cup sour cream
- 2 tablespoons mayonnaise
- 1 tablespoon adobo sauce from canned chipotle peppers
- 1 chipotle pepper in adobo sauce (finely chopped)
- 1 tablespoon fresh lime juice
- Fresh cilantro and lime wedges for serving (optional)
Instructions
- Prepare the Beef Filling: In a bowl, combine shredded beef with cumin, chili powder, garlic powder, onion powder, salt, and black pepper. Stir in shredded cheese until evenly distributed.
- Assemble the Taquitos: Warm the tortillas slightly to make them pliable. Place about 2 tablespoons of the beef mixture along the center of each tortilla, then roll tightly and secure with a toothpick if needed.
- Fry the Taquitos: Heat about 1/2 inch of oil in a skillet over medium heat. Fry the taquitos in batches, turning occasionally, until golden and crispy, about 3–4 minutes per batch. Drain on paper towels.
- Make the Chipotle Sauce: In a small bowl, mix together sour cream, mayonnaise, adobo sauce, chopped chipotle pepper, and lime juice.
- Serve: Serve taquitos warm with chipotle sauce on the side, garnished with cilantro and lime wedges if desired.
Notes
- You can substitute cooked ground beef for shredded beef for a quicker version.
- Taquitos can also be baked or air-fried for a lighter option.
- Warm tortillas in the microwave wrapped in a damp towel to prevent cracking when rolling.
