  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese

Instructions

  1. Prepare the Beef Filling: In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the ground beef and cook, breaking it apart, until browned. Drain any excess grease. Stir in the chopped onion and minced garlic, sautéing for 2–3 minutes until softened. Add the taco seasoning mix and water, then reduce heat and simmer for 5 minutes until thickened. Remove from heat and let the mixture cool slightly. Stir in the refried beans and both shredded cheeses until fully combined.
  2. Assemble the Chimichangas: Lay out each flour tortilla on a flat surface. Spoon approximately 1/2 cup of the beef filling into the center of each tortilla. Fold in the sides and roll tightly into a burrito shape. Secure with toothpicks if necessary to keep them closed during frying.
  3. Fry the Chimichangas: In a deep skillet, heat about 1/2 inch of vegetable oil over medium-high heat. Once the oil is hot, carefully place 2–3 chimichangas seam-side down into the skillet. Fry each side for 2–3 minutes or until golden brown and crispy. Remove from the oil and drain on paper towels to remove excess grease.
  4. Serve: Serve the chimichangas hot, accompanied by sour cream, guacamole, and salsa either on the side or drizzled on top as desired.
