Ingredients
Scale
For the Pasta
- 12 oz pasta (penne, spaghetti, or your favorite)
- Salt, for pasta water
For the Sauce
- 1 tbsp olive oil
- 4 garlic cloves, minced
- 1 can (14 oz) crushed tomatoes
- 1/2 tsp red pepper flakes (optional)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
To Garnish
- Fresh basil
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil and cook the pasta according to the package directions until al dente. Reserve 1/2 cup of the pasta cooking water before draining the pasta to use later in the sauce.
- Sauté the Garlic: While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned to avoid bitterness.
- Add Tomatoes and Seasonings: Stir in the crushed tomatoes, red pepper flakes (if using), salt, and black pepper. Simmer the sauce for 5-7 minutes to allow flavors to meld and the sauce to thicken slightly.
- Incorporate Cream and Cheese: Lower the heat and slowly stir in the heavy cream and grated Parmesan cheese, mixing well to create a smooth, creamy sauce. Simmer for another 2-3 minutes until heated through and well combined.
- Combine Pasta and Sauce: Add the drained pasta to the skillet with the sauce. Toss to combine, adding reserved pasta water a little at a time to loosen the sauce and help it cling to the pasta evenly.
- Garnish and Serve: Remove from heat, garnish with fresh basil leaves, and serve immediately for a comforting and flavorful meal.
Notes
- Reserve pasta water to adjust sauce consistency as needed.
- For a spicier kick, increase red pepper flakes or add a dash of cayenne pepper.
- Use freshly grated Parmesan for best flavor and smoother melting.
- To make it vegetarian, ensure the Parmesan is free from animal rennet or substitute with a vegetarian cheese.
- Fresh basil can be substituted or supplemented with fresh parsley or oregano depending on preference.
