Sauce Ingredients
- 15 ounces coconut milk (1 can)
- 2 tablespoons Thai red curry paste
- 3 cloves garlic, minced
- 1 inch ginger, minced
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon rice wine vinegar
Main Ingredients
- 16 ounces shrimp dumplings (gyoza or potstickers)
- 4 baby bok choy, chopped
- 2 green onions, sliced
- 1 tablespoon sesame seeds
- 2 teaspoons chili oil (optional)
Instructions
- Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to ensure it reaches the perfect temperature for baking the dumplings evenly.
- Prepare Sauce: In a large 9×13 inch baking dish, whisk together the coconut milk, Thai red curry paste, minced garlic, minced ginger, soy sauce, honey, and rice wine vinegar until well combined to create a rich, flavorful sauce base.
- Add Dumplings: Place the shrimp dumplings evenly into the baking dish, allowing them to soak up some of the curry sauce.
- Add Bok Choy and Bake: Scatter the chopped baby bok choy on top of the dumplings, then bake the dish in the preheated oven for 20 minutes, until the dumplings are cooked through and the bok choy is tender.
- Garnish and Serve: Remove the baking dish from the oven and sprinkle sliced green onions and sesame seeds over the top. Drizzle with chili oil if desired. Serve the dumplings on their own or alongside steamed rice for a complete meal.
Notes
- You can substitute shrimp dumplings with vegetable or chicken dumplings based on preference.
- The chili oil is optional; add it if you prefer a spicy kick.
- Serve with steamed jasmine or basmati rice to complement the curry sauce.
- Ensure dumplings are thawed if using frozen for even cooking.
- For extra crunch, add the sesame seeds just before serving to keep them crisp.
