- 16 ounces fresh spinach (or 1 pound frozen spinach, thawed and drained)

Instructions
- In a large skillet over medium heat, melt the butter. Add the chopped onion and sauté for about 3–4 minutes until soft and translucent.
- Stir in the minced garlic and cook for another 30 seconds.
- Sprinkle in the flour and cook, stirring constantly, for 1 minute to form a roux. Slowly whisk in the milk and cream, ensuring no lumps form.
- Cook for 3–4 minutes until the mixture thickens slightly. Stir in the nutmeg, salt, and pepper.
- Add the spinach and cook until wilted, about 2–3 minutes for fresh spinach or until heated through if using frozen.
- Stir in the Parmesan cheese until melted and smooth. Taste and adjust seasoning as needed. Serve warm.
