Description

Puff Pastry:

  • 1 sheet puff pastry, thawed

Turkey Filling:

  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup dried cranberries, chopped
  • 1/2 cup hazelnuts, toasted and chopped
  • 1/2 cup breadcrumbs
  • 1 tablespoon Dijon mustard
  • 1 egg, beaten (for egg wash)
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Sauté onion and garlic: In a skillet over medium heat, sauté the chopped onion until translucent. Add garlic and cook for 1 more minute.
  3. Prepare turkey mixture: In a large bowl, combine ground turkey, sautéed onion and garlic, cranberries, hazelnuts, breadcrumbs, mustard, thyme, salt, and pepper. Mix well.
  4. Assemble Wellington: Roll out puff pastry on a floured surface. Place turkey mixture in the center and shape into a log. Fold pastry over the mixture, seal edges, and place seam side down on the baking sheet.
  5. Bake: Brush pastry with beaten egg. Bake for 35–40 minutes until golden and turkey reaches 165°F (74°C) internally.
  6. Rest and serve: Let it rest for 10 minutes before slicing and serving.

  • You can substitute ground chicken for turkey if preferred.
