Puff Pastry:
- 1 sheet puff pastry, thawed
Turkey Filling:
- 1 lb ground turkey
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup dried cranberries, chopped
- 1/2 cup hazelnuts, toasted and chopped
- 1/2 cup breadcrumbs
- 1 tablespoon Dijon mustard
- 1 egg, beaten (for egg wash)
- 1 teaspoon fresh thyme leaves
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Sauté onion and garlic: In a skillet over medium heat, sauté the chopped onion until translucent. Add garlic and cook for 1 more minute.
- Prepare turkey mixture: In a large bowl, combine ground turkey, sautéed onion and garlic, cranberries, hazelnuts, breadcrumbs, mustard, thyme, salt, and pepper. Mix well.
- Assemble Wellington: Roll out puff pastry on a floured surface. Place turkey mixture in the center and shape into a log. Fold pastry over the mixture, seal edges, and place seam side down on the baking sheet.
- Bake: Brush pastry with beaten egg. Bake for 35–40 minutes until golden and turkey reaches 165°F (74°C) internally.
- Rest and serve: Let it rest for 10 minutes before slicing and serving.
Notes
- You can substitute ground chicken for turkey if preferred.
- Add a tablespoon of orange zest for extra flavor.
- Serve with gravy or cranberry sauce for a festive touch.
