Ingredients
Scale
Beef Noodle Mixture
- 12 oz cooked whole wheat rotini
- 1 lb ground beef (or pre-cooked meatballs)
- 1/4 cup flour
- 1 (0.87 oz) packet dry beef gravy mix
- 2 cups water
- 12 oz frozen peas & carrots
Biscuit Topping
- 2 cups flour
- 1 cup milk
- 1 tablespoon butter (melted)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Instructions
- Preheat and Brown the Beef: Preheat your oven to 400°F. In a large skillet over medium heat, brown the ground beef or meatballs without draining the fat to keep flavor and moisture in the dish.
- Coat Beef with Flour: Sprinkle 1/4 cup flour over the browned beef, stirring well to evenly coat the meat, which will help thicken the gravy later.
- Add Gravy Mix and Water: Stir in the dry beef gravy packet and 2 cups of water. Bring the mixture to a boil, then reduce to a simmer. Let it cook for about 2 minutes until the gravy thickens. Remove from heat, then gently fold in the cooked whole wheat rotini and frozen peas & carrots.
- Prepare Biscuit Topping: In a medium bowl, combine 2 cups flour, 1 teaspoon baking powder, and 1/2 teaspoon salt. Slowly add the milk and melted butter, mixing until a soft dough or thick batter forms—loose but not runny.
- Assemble and Bake: Spoon the beef and noodle mixture into a casserole dish, then evenly spread the biscuit dough over the top. Bake in the preheated oven for 20-25 minutes, or until the biscuit topping is golden brown and set.
Notes
- The biscuit topping can be substituted with refrigerated tube biscuits for convenience.
- Do not drain the fat after browning beef to retain moisture and flavor in the casserole.
- Ensure the biscuit dough is loose enough to spread but thick enough to hold shape during baking.
- This dish can be made with pre-cooked meatballs as a quick alternative to ground beef.
- Frozen peas and carrots add a nice touch of color and nutrition without extra prep.
