Description

Coconut Cluster Delight is a simple, no-bake dessert featuring sweetened shredded coconut coated in a rich blend of melted semi-sweet chocolate and coconut oil. Enhanced with a touch of vanilla and sea salt, and optionally mixed with crunchy chopped almonds, these bite-sized clusters are perfect for a quick, tasty treat that’s gluten-free and vegetarian.

Ingredients

Scale

Primary Ingredients

  • 2 cups sweetened shredded coconut
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup coconut oil
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon vanilla extract

Optional Ingredients

  • 1/2 cup chopped almonds (optional)

Instructions

  1. Prepare Baking Sheet: Line a baking sheet with parchment paper to prevent the clusters from sticking and for easy cleanup.
  2. Melt Chocolate and Coconut Oil: In a medium saucepan over low heat, gently melt the semi-sweet chocolate chips and coconut oil together, stirring continuously until the mixture is smooth and fully combined. Remove from heat once melted.
  3. Add Flavorings: Stir the vanilla extract and sea salt into the melted chocolate mixture to enhance the flavor.
  4. Combine Ingredients: Add the shredded coconut and chopped almonds (if using) to the chocolate mixture. Stir thoroughly until all ingredients are evenly coated with the chocolate mixture.
  5. Form Clusters: Using a spoon, drop spoonfuls of the mixture onto the prepared baking sheet, shaping them into small clusters.
  6. Chill: Place the baking sheet in the refrigerator and chill the clusters for at least 30 minutes or until they are firm and set.
  7. Store: Once firm, transfer the clusters to an airtight container and store in the refrigerator to maintain freshness.

Notes

  • For added depth of flavor, toast the shredded coconut and almonds lightly before mixing.
  • Almonds can be substituted with cashews or omitted altogether for a nut-free treat.
