Scale
Primary Ingredients
- 2 cups sweetened shredded coconut
- 1 cup semi-sweet chocolate chips
- 1/4 cup coconut oil
- 1/4 teaspoon sea salt
- 1/2 teaspoon vanilla extract
Optional Ingredients
- 1/2 cup chopped almonds (optional)
Instructions
- Prepare Baking Sheet: Line a baking sheet with parchment paper to prevent the clusters from sticking and for easy cleanup.
- Melt Chocolate and Coconut Oil: In a medium saucepan over low heat, gently melt the semi-sweet chocolate chips and coconut oil together, stirring continuously until the mixture is smooth and fully combined. Remove from heat once melted.
- Add Flavorings: Stir the vanilla extract and sea salt into the melted chocolate mixture to enhance the flavor.
- Combine Ingredients: Add the shredded coconut and chopped almonds (if using) to the chocolate mixture. Stir thoroughly until all ingredients are evenly coated with the chocolate mixture.
- Form Clusters: Using a spoon, drop spoonfuls of the mixture onto the prepared baking sheet, shaping them into small clusters.
- Chill: Place the baking sheet in the refrigerator and chill the clusters for at least 30 minutes or until they are firm and set.
- Store: Once firm, transfer the clusters to an airtight container and store in the refrigerator to maintain freshness.
Notes
- For added depth of flavor, toast the shredded coconut and almonds lightly before mixing.
- Almonds can be substituted with cashews or omitted altogether for a nut-free treat.
