Instructions
- Caramelize the Onions: Melt 1 tablespoon of butter in a skillet over medium heat. Add the sliced onions and stir to coat them evenly with butter. Cook for 10 minutes without stirring, then flip the onions over using a spatula and cook for another 10 minutes without stirring. Lower the heat to medium-low, stir the onions gently, and continue cooking for 10-15 minutes until they are deeply caramelized. Remove from heat and set aside.
- Cook the Beef Patties: Preheat a pan to high heat. In a medium bowl, gently combine ground beef with salt and pepper to season. Divide and shape into 4 equal patties. Place patties in the hot pan and cook without moving until the bottom is browned and they release easily from the pan, about 4-5 minutes. Flip the patties and cook to desired doneness, about 3-5 minutes more. Remove from pan and let rest on a plate.
- Assemble the Sandwiches: Arrange the bread slices on wax paper. Butter one side of each slice. Flip 4 slices so the buttered side is down and spread a layer of Thousand Island dressing on top if using. Place a cooked patty on each coated slice. Evenly distribute caramelized onions over the patties, then add a slice of Swiss cheese on top. Cover with the remaining bread slices, butter side up.
- Grill the Patty Melts: Heat a non-stick pan or griddle over medium heat. Place the sandwiches in the pan and cook until the bottom bread slice is golden brown and crisp, about 3-4 minutes. Carefully flip each sandwich over, press down gently with a spatula, and cook until the other side is browned and cheese is melted, about 3-4 minutes more. Remove from heat. Slice each sandwich in half and serve immediately, with extra Thousand Island dressing if desired.
