Filling and Ganache:
- 3/4 cup raspberry jam
- 4 oz semisweet chocolate, chopped
- 1/4 cup heavy cream
Instructions
- Preheat and Prepare: Preheat oven to 350°F (175°C) and line baking sheets. Cream butter and sugar. Add egg and vanilla.
- Mix Dry Ingredients: Combine flour, cocoa, baking powder, and salt in a bowl. Gradually add to wet mixture.
- Roll and Cut: Roll dough, cut shapes, and bake for 8–10 minutes. Cool on a rack.
- Assemble Cookies: Spread jam on one cookie, top with another to make a sandwich.
- Make Ganache: Heat cream, pour over chocolate, stir until smooth. Drizzle over cookies.
- Serve: Allow ganache to set before enjoying.
