- 1/3 cup white apple vinegar
- Fresh basil, chopped, about 1/4 cup
- 1/2 cup chicken broth
Instructions
- Season the Chicken: Pat the chicken breast cutlets dry, then season both sides evenly with garlic powder, kosher salt, and black pepper to infuse flavor into the meat.
- Cook Chicken: Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Place the chicken cutlets in the hot oil and cook about 5 minutes on each side until they develop a golden brown crust and are cooked through. Remove the chicken from the skillet and set aside.
- Sauté Aromatics: In the same skillet, add a bit more olive oil if needed and sauté the chopped onions over medium heat until softened, about 3-4 minutes. Add the minced garlic and cook an additional 1 minute until fragrant but not browned.
- Cook Tomatoes and Simmer Sauce: Add the cherry tomatoes, chicken broth, white apple vinegar, and chopped fresh basil to the skillet. Stir to combine, then reduce heat and let the sauce simmer for 5 to 8 minutes, allowing the tomatoes to soften and release their juices.
