Vegetables

  • 2 cups fresh broccoli, chopped (or a 10 oz. box frozen chopped broccoli, thawed)
  • 1 medium carrot, shredded
  • 1 small onion, chopped

Protein

  • 1 1/2 cups finely chopped cooked chicken


Instructions

  1. Cook the Rice: In a large saucepan, combine the wild rice mix along with the seasoning packet from the package and 5 cups of chicken broth or water. Bring the mixture to a boil over medium-high heat.
  2. Simmer Rice: Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 10 minutes, stirring once during this time to prevent sticking.
  3. Add Vegetables: Stir in the chopped broccoli, shredded carrot, and chopped onion into the simmering rice mixture. Replace the lid and continue to simmer for an additional 5 minutes to soften the vegetables.
  4. Incorporate Chicken and Creamy Ingredients: Add the finely chopped cooked chicken, condensed cream of chicken soup, and cubed cream cheese to the pot. Stir continuously while cooking over low heat until the cream cheese has melted completely and the soup is creamy and well blended.
