Instructions
- Prepare Coffee: Brew a strong cup of coffee and allow it to cool completely to ensure it does not soften the ladyfingers too much when soaked.
- Mix Mascarpone and Sugar: In a mixing bowl, combine the mascarpone cheese and granulated sugar. Whip together until the mixture is smooth and creamy, ensuring an even sweetness.
- Soak Ladyfingers: Briefly dip each ladyfinger into the mixture of cooled coffee and cherry juice. The soak should be quick to prevent sogginess, just enough to absorb flavor.
- First Layer Assembly: Arrange a layer of soaked ladyfingers at the bottom of your serving dish. Spread half of the mascarpone mixture evenly over the ladyfingers and scatter half of the halved cherries on top.
- Second Layer Assembly: Repeat the layering process by adding the remaining soaked ladyfingers, followed by the remaining mascarpone mixture and cherries to create a second layer.
- Chill: Cover the dish with plastic wrap or a lid and refrigerate for at least four hours, preferably overnight, to allow the flavors to meld and the dessert to set properly.
- Finish and Serve: Just before serving, dust the top with cocoa powder to add a chocolate aroma and a beautiful finishing touch.
