Description

This easy Pizza Toast recipe turns simple bread into a delicious, mini pizza snack. With a crispy toasted base, melted mozzarella, pepperoni, and fresh vegetables, topped with basil for a fresh finish, it’s perfect for a quick lunch or party appetizer.

Ingredients

Scale

Base

  • 6 slices thick Texas toast square sandwich bread

Pizza Sauce

  • 6 tablespoons prepared pizza sauce (1 tablespoon per slice of bread)

Cheese

  • 2 cups freshly shredded mozzarella cheese (approx. â…“ cup per slice)

Toppings

  • 18 slices pepperoni (3 slices per bread slice)
  • â…“ cup sliced button mushrooms
  • â…“ cup diced green bell pepper
  • â…“ cup diced red onion
  • 4 fresh basil leaves, julienned

Instructions

  1. Preheat and Toast Bread: Preheat your oven to 425°F. Spray a baking sheet with nonstick cooking spray and arrange the bread slices in a single layer. Bake for 3 to 4 minutes until the bread just begins to toast, creating a firm base for toppings.
  2. Add Sauce and Toppings: Remove the toasted bread from the oven and flip each slice over. Spread 1 tablespoon of pizza sauce evenly on each slice. Sprinkle 3 tablespoons of shredded mozzarella cheese on top, then add 3 pepperoni slices, some sliced mushrooms, diced green bell pepper, and diced red onion. Finally, top each slice with 2 more tablespoons of shredded mozzarella for a gooey cheese layer.
  3. Melt the Cheese: Return the prepared bread slices to the oven and bake for 5 to 8 minutes, or until the cheese has melted fully and shows some golden brown spots.
  4. Garnish and Serve: Remove the pizza toasts from the oven, sprinkle with fresh julienned basil leaves for a burst of flavor, and enjoy immediately while warm and cheesy.

Notes

  • Use thick Texas toast for the best sturdy base that won’t get soggy.
  • Feel free to substitute pepperoni with other meats or keep it vegetarian by omitting it.
  • Adjust vegetables to your preference or add olives, jalapeños, or other favorite pizza toppings.
  • For extra crispiness, broil for the last 1-2 minutes but watch carefully to avoid burning.
  • Store leftovers in the fridge and reheat in an oven or toaster oven for best texture.
