Description

These Chai Spiced Energy Balls are a delicious and nutritious snack packed with flaxseed, pumpkin seeds, dates, and oats, blended together with warming chai spices. Perfect for a quick energy boost, they require no baking and come together in minutes using a food processor.

Dry Ingredients

  • 1/2 cup flaxseed meal
  • 1/2 cup pumpkin seeds
  • 1 cup oats (old fashioned or quick oats)
  • 2 teaspoons chai spice

Other Ingredients

  • 10 dates, pits removed
  • 4 teaspoons water


Instructions

  1. Process Pumpkin Seeds: Add the pumpkin seeds to a food processor and pulse until they break down into small crumbles, approximately 10 to 20 seconds. This helps to create a coarse base for the energy balls.
  2. Add Remaining Ingredients and Blend: Add the flaxseed meal, dates (pits removed), oats, chai spice, and water into the food processor with the pumpkin seed crumbs. Process for 60 to 90 seconds until the mixture is well blended and comes together, forming a sticky dough ball.
  3. Form Balls and Store: Using a heaping tablespoon, scoop the mixture and roll into balls using your hands. Repeat until all mixture is used. Place the energy balls into an airtight container and store them in the refrigerator to keep fresh and firm.

Notes

  • Use Medjool dates for a softer texture and natural sweetness.
  • If the mixture is too dry, add additional water one teaspoon at a time.
  • Store energy balls in the refrigerator for up to one week or freeze for longer storage.
  • You can substitute pumpkin seeds with sunflower seeds if preferred.
