  • 1 medium tomato, sliced
  • Small handful fresh basil, torn or chopped
  • Salt & pepper, to taste
  • A light sprinkle of garlic powder
  • Red onion, thinly sliced (optional)
  • A drizzle of balsamic vinegar (optional)


Instructions

  1. Heat the skillet: Preheat a skillet over medium heat to ensure even cooking and to prepare for toasting the sandwich.
  2. Prepare the bread: Spread mayo generously on one side of each bread slice. Place one slice mayo side down into the heated skillet.
  3. Add the fillings: Layer the fresh mozzarella slices on the bread in the skillet, then add tomato slices and basil. Season with salt, pepper, and garlic powder. Add optional red onion and drizzle balsamic vinegar as desired.
  4. Toast the first side: After a few minutes, carefully lift a corner of the bread to check for a golden brown color. This usually takes about 10 minutes.
  5. Assemble and flip: Place the second bread slice on top of the fillings, mayo side up. Flip the sandwich over using two spatulas, then cover the pan and cook for 1-2 minutes to melt the cheese.
