For the Bruschetta Dip:
- 2 cups cherry tomatoes, diced
- 1/2 cup fresh basil leaves, chopped
- 1/4 cup red onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
For Serving:
- 1 French baguette or crostini
Instructions
- In a medium bowl, combine diced cherry tomatoes, basil, red onion, and garlic.
- Let the mixture marinate for at least 10 minutes to meld flavors.
- Transfer the mixture to a serving dish and top with mozzarella and Parmesan.
- If desired, broil for 2–3 minutes until cheese is melted and bubbly.
- Serve immediately with sliced baguette or crostini.
Drizzle with balsamic vinegar and olive oil, season with salt and pepper. Gently stir to combine.

- For extra flavor, toast the baguette slices with a drizzle of olive oil.
