Description

  • 2 cups cherry tomatoes, diced
  • 1/2 cup fresh basil leaves, chopped
  • 1/4 cup red onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

For Serving:

  • 1 French baguette or crostini

Instructions

  1. In a medium bowl, combine diced cherry tomatoes, basil, red onion, and garlic.
  2. Drizzle with balsamic vinegar and olive oil, season with salt and pepper. Gently stir to combine.

  3. Let the mixture marinate for at least 10 minutes to meld flavors.
  4. Transfer the mixture to a serving dish and top with mozzarella and Parmesan.
  5. If desired, broil for 2–3 minutes until cheese is melted and bubbly.
  6. Serve immediately with sliced baguette or crostini.

Notes

  • For extra flavor, toast the baguette slices with a drizzle of olive oil.
