Description

These Breakfast Stuffed Puff Pastry Bars are a delightful and easy-to-make morning treat featuring flaky puff pastry filled with a savory mixture of eggs, cheddar cheese, and your choice of bacon, sausage, ham, or veggies. Perfectly baked to golden perfection, they offer a satisfying combination of creamy, cheesy filling and buttery, crispy pastry—ideal for a quick breakfast or brunch.

Ingredients

Scale

Puff Pastry Bars

  • 1 sheet Puff pastry, thawed
  • 3 large eggs
  • 1/2 cup Cheddar cheese, shredded
  • 1/2 cup cooked bacon, crumbled (or sausage, ham, or veggies)
  • 1/4 cup Milk
  • Salt and pepper, to taste
  • 1 tbsp Butter, for greasing
  • 1 tbsp Olive oil, for brushing

Optional Toppings and Garnish

  • 1 tbsp Fresh parsley, chopped
  • 1 tbsp Parmesan cheese, grated

Instructions

  1. Preheat Oven: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper to prepare for baking.
  2. Prepare Filling: In a bowl, whisk together eggs, milk, salt, and pepper until the mixture is smooth. Stir in the cooked bacon (or choice of meat/veggies) and shredded cheddar cheese to combine evenly.
  3. Prepare Puff Pastry: Unroll the thawed puff pastry sheet onto a lightly floured surface. Cut it into 4 equal rectangles or squares based on your preferred size for the bars.
  4. Assemble Bars: Spoon the egg and cheese mixture onto the center of each puff pastry rectangle. Fold the edges over the filling to enclose it, forming a bar shape. Press the edges firmly to seal the filling inside.
  5. Prepare for Baking: Place the stuffed puff pastry bars onto the lined baking sheet. Brush the tops evenly with olive oil for a golden finish and optionally sprinkle grated Parmesan cheese over the bars for extra flavor.
  6. Bake: Bake in the preheated oven for 20-25 minutes until the puff pastry is puffed and golden brown and the filling is fully set and cooked through.
  7. Cool and Serve: Let the bars cool on the baking sheet for a few minutes to set. Garnish with fresh chopped parsley if desired, then serve warm and enjoy your savory breakfast bars!

Notes

  • Feel free to substitute bacon with sausage, ham, or your favorite vegetables for different flavor variations.
  • Make sure the puff pastry is fully thawed before cutting and assembling to avoid cracking.
  • For a crispier crust, brush the bars with egg wash instead of olive oil.
  • These bars can be made ahead and reheated in the oven or microwave for a quick breakfast option.
  • Use parchment paper or a silicone baking mat to prevent sticking and ease cleanup.
