Instructions
- Prepare the Filling: In a medium bowl, combine the softened cream cheese, granulated sugar, vanilla extract, and lemon zest. Mix until smooth, then gently fold in the blueberries, ensuring they are evenly incorporated without breaking.
- Assemble the Egg Rolls: Lay one egg roll wrapper on a clean surface in a diamond shape. Spoon about 2 tablespoons of the blueberry cream cheese filling near the center. Fold the sides inward, then roll tightly from one corner to the other, sealing the edge with a dab of water to keep it closed. Repeat this process with all wrappers and remaining filling.
- Heat the Oil: Pour about 2 inches of vegetable oil into a deep skillet or pot and heat over medium heat until it reaches 350°F (175°C). Use a thermometer for accurate temperature.
