  • 1 1/2 cups shredded cheese (such as cheddar, mozzarella, pepper jack, or vegan cheese)

Instructions

  1. Preheat the oven. Set your oven to 375°F (190°C) so it will be ready when you finish assembling the dish.
  2. Sauté beef and veggies. Heat a skillet over medium-high heat and add the oil. Add the ground beef, diced bell pepper, zucchini, and chopped green onions. Break the meat apart and cook until the beef is browned and the vegetables have softened, about 7-8 minutes.
  3. Add spices and sauce. Turn off heat and sprinkle in chili powder, cumin, garlic powder, and oregano. Pour in the green enchilada sauce and stir in black beans and frozen corn. Toss gently to combine all ingredients evenly.
  4. Stir in tortillas. Fold the corn tortilla wedges into the skillet mixture until the tortillas are well coated with the sauce and beef mixture.
  5. Top with cheese and bake. Sprinkle shredded cheese evenly over the top of the skillet. Place the skillet in the preheated oven and bake for 10–15 minutes, or until the cheese is melted, bubbly, and slightly golden.
