Instructions
- Prepare Beef: In a bowl, combine thinly sliced ribeye steak with baking soda, cornstarch, and soy sauce. Mix well and set aside to marinate briefly while preparing the sauce.
- Make Sauce: In a separate bowl, whisk together oyster sauce, low-sodium soy sauce, dark soy sauce, sugar, rice vinegar, and sesame oil until fully combined to create the stir-fry sauce.
- Heat Pan and Sear Beef: Heat olive oil in a large skillet or wok over high heat. Add the marinated beef, spreading it out in a single layer. Let it sear without stirring for 2 minutes to develop a nice crust.
- Stir-Fry Beef and Aromatics: After searing, stir-fry the beef until browned on all sides. Add minced garlic, sliced onion, and julienned ginger to the pan, cooking for about 1 minute until aromatic.
- Add Mushrooms: Stir in quartered mushrooms and cook until they are slightly softened, roughly 2 to 3 minutes.
- Combine Sauce and Finish Cooking: Pour the prepared stir-fry sauce over the beef and vegetables. Stir everything together and cook until the sauce thickens slightly and coats all the ingredients evenly, about 1 to 2 minutes.
