- 1/2 pound bacon, cooked and crumbled
- 1 1/2 cups Cheddar cheese, shredded
- 1 small onion, chopped
- 2 – 3 jalapenos, stems and seeds removed, chopped
- 1 tablespoon butter
- Salt and pepper, to taste

- 8 hamburger buns
- Condiments and toppings of choice (BBQ sauce, lettuce, tomato, pickles, etc.)
Instructions
- Preheat the Grill: Preheat your grill for direct grilling over high heat to ensure a nice sear and even cooking of the burgers.
- Prepare Jalapeno and Onion Mixture: In a medium skillet, melt the butter over medium-high heat. Add the chopped onion and jalapenos, cooking until softened. Remove from heat and set aside to cool slightly.
- Form Burger Patties (Bottom Layer): Divide the ground beef into 8 equal portions, then split each portion in half, creating 16 chunks. Flatten 8 of these chunks on waxed paper into thin patty shapes to serve as the bottom halves of the stuffed burgers.
- Mix Stuffing: In a medium bowl, combine the crumbled bacon, shredded cheddar cheese, and the sautéed jalapeno and onion mixture. Mix these ingredients well to create the stuffing.
- Assemble Burgers: Place about ¼ cup of the bacon-cheddar-jalapeno mixture in the center of each bottom patty. Flatten the remaining 8 chunks of ground beef slightly and place them on top of the stuffed patties. Carefully seal the edges by pressing the two beef layers together, forming fully enclosed stuffed burgers. Season the tops with salt and pepper.
- Grill Burgers: Place the assembled burgers on the preheated grill. Cook for approximately 4-5 minutes on the first side, then carefully flip and cook for another 3-4 minutes on the second side, or until the internal temperature reaches 160°F (71°C) for fully cooked meat.
- Brush with BBQ Sauce and Final Grill: Using a basting brush, generously coat the burgers with BBQ sauce. Allow them to cook an additional 1-2 minutes, basting again with BBQ sauce to build flavor. Remove from the grill and let the burgers rest for a few minutes.
- Serve: If desired, toast the hamburger buns on the grill while the burgers rest. Serve the stuffed burgers on the buns with your selection of condiments and toppings such as lettuce, tomato, pickles, and extra BBQ sauce.

- For a milder flavor, reduce the number of jalapenos or remove all seeds before chopping.
- Ensure the beef patties are sealed tightly to prevent the cheese and stuffing from leaking during grilling.
- If you don’t have a grill, these burgers can be cooked on a stovetop grill pan or broiled in the oven.
