Ingredients
Scale
Protein
- 1 lb boneless, skinless chicken breast, diced
Rice & Vegetables
- 2 cups cooked jasmine rice, cooled
- 1 cup mixed vegetables (peas, carrots, corn)
- 3 cloves garlic, minced
Sauce
- 1/4 cup mayonnaise
- 2 tbsp sweet chili sauce
- 1 tbsp sriracha
- 1 tbsp soy sauce
Other
- 1 tsp sesame oil
- 2 tbsp vegetable oil (for cooking)
Instructions
- Prepare Bang Bang Sauce: In a small bowl, combine mayonnaise, sweet chili sauce, sriracha, and soy sauce until smooth. Set the sauce aside for later use.
- Cook Chicken: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the diced chicken and cook for 5-7 minutes, or until browned and cooked through. Remove the chicken from the skillet and set it aside.
- Sauté Garlic: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
- Cook Vegetables: Add the mixed vegetables to the skillet and cook for 2-3 minutes until they are tender but still crisp.
- Fry Rice: Stir in the cooked, cooled jasmine rice into the skillet with the vegetables. Fry and stir continuously for 2-3 minutes to heat through evenly.
- Combine Chicken and Sauce: Return the cooked chicken to the skillet with the rice and vegetables. Pour the prepared bang bang sauce over everything, mixing well to coat all ingredients thoroughly.
- Finish and Serve: Drizzle sesame oil over the mixture and toss to combine. Serve the Bang Bang Chicken Fried Rice hot for a delicious, spicy meal.
Notes
- Use leftover rice that has been refrigerated for best texture in fried rice.
- Adjust the amount of sriracha according to your preferred spice level.
- You can substitute mixed vegetables with your favorite stir-fry veggies.
- For a lower calorie option, use light mayonnaise or Greek yogurt instead.
- Ensure the pan is hot before cooking chicken to get a nice sear.
