Description

This Bang Bang Chicken Fried Rice is a flavorful and quick rice dish combining tender chicken, mixed vegetables, and a creamy, spicy bang bang sauce. Perfect for a satisfying weeknight dinner, it brings Asian-inspired flavors cooked quickly on the stovetop in a skillet or wok.

Ingredients

Scale

Protein

  • 1 lb boneless, skinless chicken breast, diced

Rice & Vegetables

  • 2 cups cooked jasmine rice, cooled
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 3 cloves garlic, minced

Sauce

  • 1/4 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha
  • 1 tbsp soy sauce

Other

  • 1 tsp sesame oil
  • 2 tbsp vegetable oil (for cooking)

Instructions

  1. Prepare Bang Bang Sauce: In a small bowl, combine mayonnaise, sweet chili sauce, sriracha, and soy sauce until smooth. Set the sauce aside for later use.
  2. Cook Chicken: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the diced chicken and cook for 5-7 minutes, or until browned and cooked through. Remove the chicken from the skillet and set it aside.
  3. Sauté Garlic: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
  4. Cook Vegetables: Add the mixed vegetables to the skillet and cook for 2-3 minutes until they are tender but still crisp.
  5. Fry Rice: Stir in the cooked, cooled jasmine rice into the skillet with the vegetables. Fry and stir continuously for 2-3 minutes to heat through evenly.
  6. Combine Chicken and Sauce: Return the cooked chicken to the skillet with the rice and vegetables. Pour the prepared bang bang sauce over everything, mixing well to coat all ingredients thoroughly.
  7. Finish and Serve: Drizzle sesame oil over the mixture and toss to combine. Serve the Bang Bang Chicken Fried Rice hot for a delicious, spicy meal.

Notes

  • Use leftover rice that has been refrigerated for best texture in fried rice.
  • Adjust the amount of sriracha according to your preferred spice level.
  • You can substitute mixed vegetables with your favorite stir-fry veggies.
  • For a lower calorie option, use light mayonnaise or Greek yogurt instead.
  • Ensure the pan is hot before cooking chicken to get a nice sear.
