Description

Feta Pasta:

  • 1 block (8 oz) feta cheese
  • 2 pints cherry tomatoes
  • 3 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1/2 teaspoon crushed red pepper flakes
  • 10 oz pasta (such as penne or rotini)
  • 1/4 cup chopped fresh basil
  • Salt and black pepper to taste


Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C).
  2. Prepare the baking dish: In a baking dish, place cherry tomatoes and drizzle with 2 tablespoons of olive oil. Add minced garlic and red pepper flakes, then toss to coat.
  3. Bake the feta: Place the block of feta cheese in the center, drizzle with remaining olive oil, and bake for 30 minutes until tomatoes burst and feta is golden.
  4. Cook the pasta: While feta bakes, cook pasta until al dente, then drain and reserve 1/2 cup of pasta water.
  5. Combine: Remove dish from oven, mash feta and tomatoes, add pasta and reserved water, stir to coat. Season with salt and pepper.
  6. Serve: Garnish with fresh basil before serving.
