- 1 cup panko breadcrumbs
- 1 egg
- 3/4 cup parmesan, finely grated
- 1 cup green onion, finely sliced (~2 stems)
- 2 garlic cloves, minced
- 1/2 tsp dried sage
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 tbsp olive oil
Burger Assembly
- 4 soft burger buns or brioche buns
- 1 large avocado (or 2 medium)
- 60g / 2 oz rocket/arugula or other lettuce of choice
- 2 tomatoes, sliced
- 4 slices Swiss cheese (or other cheese)
- Mayonnaise, relish, ketchup, or tomato sauce (to smear lid)

Instructions
- Prepare the Patty Mixture: In a large bowl, combine the ground chicken, panko breadcrumbs, egg, grated parmesan, finely sliced green onions, minced garlic, dried sage, salt, and pepper. Mix thoroughly until all ingredients are evenly incorporated to create a uniform chicken mixture.
- Shape Patties: Divide the mixture into four equal portions and form each into a round, flat patty roughly the size of the burger buns.
- Cook the Patties: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until the internal temperature reaches 74°C (165°F) and the patties are golden brown and cooked through.
- Prepare Buns and Toppings: While the patties are cooking, slice the tomatoes and avocado. Lightly toast the burger buns if desired.
- Assemble the Burgers: Spread mayonnaise, relish, ketchup, or tomato sauce on the inside of the buns. Place a lettuce leaf or rocket on the bottom bun, followed by the cooked chicken patty. Top each patty with a slice of Swiss cheese, slices of avocado, and tomato.
- Serve: Cover with the top bun and serve immediately with a side of French fries or baked potato wedges.
