Scale
Wet Ingredients
- 1 cup unsalted butter
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
Dry Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup rolled oats
Add-ins
- 1 cup chopped apples
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or lightly grease it to prevent the cookies from sticking.
- Cream Butter and Sugar: In a large mixing bowl, cream together the unsalted butter and granulated sugar until the mixture is light and fluffy, about 3-4 minutes using an electric mixer on medium speed.
- Add Egg and Vanilla: Add the large egg to the butter and sugar mixture and beat until well combined, then mix in the vanilla extract until fully incorporated.
- Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, and salt. Set aside.
- Combine Dry and Wet: Gradually add the dry ingredients to the wet ingredients in small portions, mixing thoroughly after each addition. Scrape down the sides of the bowl to ensure even mixing.
- Add Oats: Stir in the rolled oats until evenly distributed throughout the dough.
- Fold in Apples and Walnuts: Gently fold in the chopped apples and optional walnuts until evenly mixed into the cookie dough.
- Shape Cookies: Use a spoon or cookie scoop to drop rounded tablespoons of dough onto the prepared baking sheet, spacing about 2 inches apart to allow spreading during baking.
- Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the edges are golden brown and centers are set.
- Cool: Remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
- Serve: Enjoy your freshly baked apple cookies with a warm cup of tea or coffee!

- Chopped walnuts add crunch but can be omitted for nut allergies.
- Use firm, crisp apples for best texture and flavor.

- These cookies can also be frozen for up to 3 months.
