Instructions

  1. Cook the Meat: Heat a non-stick pan over medium heat. Cook the sausage or bacon until browned and cooked through, then remove to a plate. If using cooked ham, you can either heat it briefly or add it later over the cheese in step 4. Wipe off excess oil from the skillet if needed and then reduce heat to low.
  2. Cook the Eggs: In a measuring cup, beat 2 eggs with a pinch of salt and pepper. Pour the beaten eggs into the pan and swirl to spread evenly over the bottom. Cook over low heat until the eggs are nearly set and no longer runny when the pan is tilted.
